About the Recipe
This is a staple in my house. The kids love it because there's nothing "gross" in it, and I love it because it comes together in about 30 minutes using just one pot. My husband loves it because he's in charge of cleaning up, and it means he only has one pot to wash!
I always serve this with either breadsticks or dinner rolls, whichever is cheaper that week!

Ingredients
one pack smoked beef bratwurst
1/2 onion, diced
1 Tablespoon minced garlic
1 - 14.5oz can diced tomatoes
1 bag wide egg noodles
32oz chicken stock or broth
1 8-oz block shredded cheddar cheese
1/4 bag spinach, chopped
salt
pepper
Italian Seasoning
shaved parmesan (optional garnish)
Preparation
Slice bratwurst to desired thickness and cook on medium-high heat until browned.
Add diced onion and garlic and cook about 3-5 minutes until onions are transluscent and garlic is fragrant.
Add diced tomatoes (no need to drain!) and cook another 5 minutes while stirring.
Add the bag of egg noodles and press them down flat into the pot. Add the chicken stock/broth. Depending on the size of your pot, you may need a little water also. The noodles do not need to be completely covered!
Cover the pot and turn the heat to low. Stir every couple minutes until noodles are just cooked
Add shredded cheese a little at a time while stirring.
Add chopped spinach.
Season with salt, pepper, and Italian Seasoning to your desire.
Scoop into bowls and top with shredded parmesan.
